What's the fuss over whether beans come from a single region? Answer: Cacao beans- much like tea leaves, coffee beans, and wine grapes- are a terroir product. This means they take on the flavor profile and characteristics of the region they grow in flavors unique to that soil, climate, and environment. Some regions have very specific flavor profiles.

History and origin of Sao Thomé cocoa has a long tradition in African cocoa. It’s even referred to as Chocolate Island. The island produces a very dark and intense cocoa with surprising aromatic notes. Taste profile Dark chocolate with a huge concentration of cocoa. The aroma is slightly spicy, with roast touches and impressions of cappuccino. The taste is at first pleasantly mild-bitter, full and fruity with impressions of candied black fruit. Then come floral and coffee bean impressions. Fine touches of oak emerge in the final.

The characteristic intensity of Mexico's cocoa originates in a mild fermentation of the beans. This extremely delicate chocolate is a subtle blend of Criollo and Forastero. Under a hint of bitterness, it conceals liquorice notes.

Beans from Peru tend to have nutty, buttery flavors. Chocolate made from beans from a single region allows the flavors to truly shine. Thanks to its red fruits and acidic notes, Alto El Sol is an intense, sharp and highly fruity chocolate. It will pair well with Vanilla, Speculoos, Mango, Almonds, Pistachio, Olive oil, Tonka Beans, Banana, Apricot, Peach, Mirabelle Plum, Red Pepper, Tomato, Eucalyptus, and Bergamot.

With its standard fluidity, you can use the Single Origin Pack in a broad range of applications: molding, enrobing, ganaches, flavoring pastry crèmes and mousses, etc.
